I’ve been away from LB for a number of years, but I still run and maintain a long program I wrote about 10 years ago. I’m interested in getting back in and would like to try out LB5. Is there a document outlining what works and doesn’t work in LB5 - like a list of all LB4 keywords and functions alongside the LB5 information?

Since the goal is backwards compatibility, all the commands in LB4 should work in LB5. However, because LB5 is multiplatform (Windows, Macintosh and Linux) it uses emulated widgets. Because of this, the use of API calls to control widgets mostly won't work.
If your program doesn't use APIs, then your program should just work. If it doesn't, report it as a bug here.

Let me add that LB5 does a lot more than LB4. Right now the example programs and the release notes are the only documentation, aside from a start on the Help that comes with it. This needs more work.
